Nestor Lasso approaches coffee as something to keep learning. He learns from the growers around him and listens closely to the people who buy his coffee. On the farm, he has put time and patience into recording each processing step and using research to guide coffee cherry picking and fermentation. That work has helped him repeat processes with similar cup profiles.
