Roasting coffee

Roasting & freshness

What changes before you brew?

Storing green coffee

Before roasting, green coffee needs protection during storage. Cool, dry conditions and protective packaging help slow changes in its quality. Source: SCA Fresh Green Coffee

Freshness & storage

Roasted coffee releases carbon dioxide, while contact with oxygen contributes to staling. Grinding speeds up the loss of freshness by exposing more of the coffee. Source: SCA Fresh Coffee

Note the roast date, storage and when you grind. Compare your own cups over time rather than treating one number of days as a rule for every coffee. Explore Roasters, then continue to Brewing.
